Instructions

Step-by-Step 

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with cocoa powder (or flour). Set aside.
  2. Melt the Chocolate and Butter: In a heatproof bowl, melt the butter and chocolate together. You can do this over a double boiler or in the microwave, stirring every 20-30 seconds until smooth.
  3. Mix the Wet Ingredients: In a separate bowl, whisk together the eggs, egg yolks, powdered sugar and vanilla extract until well combined.
  4. Combine the Chocolate Mixture: Pour the melted chocolate and butter mixture into the egg mixture and stir until smooth.
  5. Add the Dry Ingredients: Sift in the flour and salt, then gently fold until just combined. Be careful not to overmix!
  6. Fill the Ramekins: Divide the batter evenly among the prepared ramekins, filling them about 3/4 of the way full.
  7. Bake: Place the ramekins on a baking sheet and bake for 10-12 minutes. The outer edges should be set, but the center should still jiggle slightly when you give the ramekin a little shake.
