For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

For the Topping:

  • 1 pint fresh strawberries, hulled and sliced
  • 2 tbsp strawberry jam (optional)

Instructions

  1. Prepare the Crust

    • Combine graham cracker crumbs and melted butter in a mixing bowl until the texture resembles wet sand.
    • Spoon about 1–2 teaspoons of the mixture into each slot of a mini muffin tin. Press down firmly to form the crust.
  2. Make the Filling

    • Beat the cream cheese in a large bowl until smooth.
    • Add powdered sugar and vanilla extract, mixing until fully combined.
    • Transfer the mixture to a piping bag or Ziploc bag with the corner snipped off.
  3. Assemble the Bites

    • Pipe the cream cheese filling onto the crusts, filling each muffin slot almost to the top.
    • Chill in the fridge for at least 2 hours (or in the freezer for 30 minutes).
  4. Add the Topping

    • Top each bite with a slice of fresh strawberry.
    • For added sweetness and shine, brush a thin layer of strawberry jam over the strawberry slices (optional).
  5. Serve and Enjoy

    • Carefully remove the bites from the muffin tin using a butter knife.
    • Serve chilled and enjoy these creamy, fruity delights!
