- 1 cup graham cracker crumbs
- 3 tbsp melted butter
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract

- 1 pint fresh strawberries, hulled and sliced
- 2 tbsp strawberry jam (optional)
Instructions
Prepare the Crust
- Combine graham cracker crumbs and melted butter in a mixing bowl until the texture resembles wet sand.
- Spoon about 1–2 teaspoons of the mixture into each slot of a mini muffin tin. Press down firmly to form the crust.
Make the Filling
- Beat the cream cheese in a large bowl until smooth.
- Add powdered sugar and vanilla extract, mixing until fully combined.
- Transfer the mixture to a piping bag or Ziploc bag with the corner snipped off.
Assemble the Bites
- Pipe the cream cheese filling onto the crusts, filling each muffin slot almost to the top.
- Chill in the fridge for at least 2 hours (or in the freezer for 30 minutes).
Add the Topping
- Top each bite with a slice of fresh strawberry.
- For added sweetness and shine, brush a thin layer of strawberry jam over the strawberry slices (optional).
Serve and Enjoy
- Carefully remove the bites from the muffin tin using a butter knife.
