Ingredients

For the Beef:
  • 1.5 lbs lean beef chuck or stew meat (trimmed and cut into 1-inch pieces)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh rosemary (or ½ teaspoon dried)
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
For the Braise:
  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons balsamic vinegar 
  • 2 cups low-sodium beef broth or bone broth
  • 2 medium sweet potatoes, peeled and diced
  • 1 zucchini, diced (optional)
Optional for Thickening:
  • 1 tablespoon cornstarch or arrowroot powder (mixed with 2 tablespoons water)

Instructions

Step 1: Prepare the Ingredients

  • Trim excess fat from the beef and cut into cubes.
  • Dice the sweet potatoes and chop the remaining vegetables.

Step 2: Sear the Beef

  • Heat olive oil in a Dutch oven over medium-high heat.
  • Sear the beef in batches until browned on all sides (about 3 minutes per side).
  • Remove from the pot and set aside.

Step 3: Sauté the Vegetables

  • Reduce heat to medium and add onion, carrots, and celery.
  • Cook for 5 minutes until softened, then stir in garlic, paprika, rosemary, thyme, salt, and pepper.

Step 4: Deglaze & Simmer

  • Pour in balsamic vinegar and scrape up any browned bits.
  • Add the broth and return the beef to the pot. Cover and simmer on low heat for 1.5 hours.

Step 5: Add Sweet Potatoes

  • Stir in the diced sweet potatoes and zucchini (if using).
  • Cover and cook for another 30-40 minutes until tender.

Step 6: Thicken the Sauce (Optional)

  • If the sauce is too thin, mix cornstarch with water and stir it in. Let simmer for 5 more minutes.

Step 7: Serve & Enjoy!

  • Garnish with fresh parsley or a squeeze of lemon juice.
  • Serve on its own, with brown rice, or alongside a crisp green salad.
